Mandazi and Kenyan Chai

Sweet fried mandazi paired with spiced Kenyan tea for a cozy breakfast ritual.

Mandazi and chai make mornings feel gentle and indulgent. The golden pastries are slightly sweet and pillowy, while the spiced tea is warm, milky, and fragrant.

The ritual

I make the dough the night before when I have a quiet moment, then fry the mandazi just before breakfast. The smell of coconut and cardamom fills the kitchen, and the pastries stay soft inside with crisp edges.

Kenyan chai is about more than tea leaves. I simmer it with whole spices, sugar, and evaporated milk until it is creamy and aromatic. It pairs beautifully with the light sweetness of the mandazi.
