Nyama choma is one of those dishes that brings people together. The aroma of grilled meat, the bright crunch of kachumbari, and the smoky char make it a favorite for relaxed weekend nights.

What makes it work

I keep the seasoning simple: coarse salt, pepper, and a little garlic. The grill is the star, so I focus on getting a good sear and letting the meat rest before carving.

Kachumbari is the cooling side that keeps the plate balanced. Tomatoes, onions, cilantro, and a splash of lime juice create a crisp salad that cuts through the richness of the meat.

My favorite pairing

I often serve this with ugali or warm flatbread, and sometimes a small bowl of chili sauce on the side. It feels casual and satisfying, with a strong sense of place from the Kenyan flavors.
